If you're interested in photography, then I would recommend getting something like a Nikon D5000 or even an old D80. I started with a Nikon D40/ The only reason I chose Nikon over Canon is the ergonomics and experience from my point of view. It's generally very comfortable for beginners. If you're interested in video, get the 5000 or the D90 - otherwise, I think the D80 (which goes quite cheap now) or the D200 are quite wonderful bodies. Nikon is used by more professionals than any other camera. I will tell more about D700 later.

Remember, as long as you have a decent body, you're well off. The more important factor is the lens. I've heard good reviews of the 18-200 VR lens. A cheaper (but just as sharp or even sharper) alternative is the 18-135 lens. I've used the latter with great results on the d80! Spent some money on lenses for a good beginning.
